Seasonal Produce Recipes and More!

April 11, 2019

Renee Sweers

Spring is here and everyone is ready for it. Warm weather brings fresh Iowa and Midwest produce, with asparagus being one of the first vegetables available.

Perhaps you have wondered about produce:

What is the best way to store fresh produce? Do I store fresh asparagus the same way I store fresh broccoli? What about spinach? Fresh cut herbs?

How do I use the garden produce my neighbor gave me?

I've seen fresh produce items at the Farmer's Market that I don't buy, because I don't know how to prepare them.

My grandmother fried eggplant, but I wonder if there are other ways - maybe even healthier ways - to cook it.

I would like to shop at a Farmer's Market, but I'm not sure where to find one.

ISU Extension and Outreach has resources to help with all things produce related.

Preparing fresh produce is easy if you have the information you need and a few skills. Produce Basics (https://spendsmart.extension.iastate.edu/cook/produce-basics/) from Spend Smart. Eat Smart. describes how to store, clean, and prepare various fresh fruits and vegetables. Recipes, handouts and videos are also available. The recipes also meet the ISU Extension and Outreach nutrition guidelines, which means they are high in beneficial nutrients and are lower in sodium, fat and sugar.

Produce Basics is found at the Spend Smart. Eat Smart. website (https://spendsmart.extension.iastate.edu/) or Mobile App.

The Seasonal and Simple App is another resource to help buy and use fresh produce. Use the zip code locator to find Farmers Markets near you. Learn how to select and store various Midwest produce items. Learn what is in season when, the best way to store it, then browse simple and nutritious recipes for each produce item.

The Seasonal and Simple App is a collaborative project between Iowa State University, the University of Missouri Extension, Kansas State Research and Extension and Nebraska Extension.

To find the phone apps, search for Seasonal and Simple and Spend Smart. Eat Smart. from your mobile device's app store.
